
Where Does Food Waste Actually Begin?

We picture waste as the forgotten leftovers in our own fridge. Most of it is already gone long before that.
Ask most people where food waste comes from and they’ll point at themselves — the bag of spinach that turned to liquid, the bread that went hard, the leftovers nobody claimed. That guilt is real, and household waste genuinely is a large share of the problem. But it’s also the very end of a long line. By the time food reaches your kitchen, it has already survived a gauntlet where most of what’s lost never gets a name.
Waste is a supply-chain event, not a moral failing
A tomato can be wasted before it’s picked, because the price that week doesn’t cover the cost of harvesting it. It can be wasted in a chilled truck whose temperature drifted a few degrees. It can be wasted in a warehouse because the paperwork outran the produce, or on a shelf because it was a day from its date and no longer “sellable” — even though it was still perfectly safe to eat.
None of those are decisions a shopper ever sees. They’re decisions about logistics, pricing, standards and timing, made long before the fridge. Which is why “just plan your meals better” — good advice as it is — can only ever reach the last link in the chain.
The question isn’t only how do I waste less at home? It’s where in the system was this already destined to be lost?
Why “safe” and “sellable” drift apart
A lot of what gets discarded is thrown out on quality grounds, not safety ones. A best-before date is a manufacturer’s estimate of peak quality, not a cliff-edge of danger — yet it routinely triggers disposal of food that would pass any real test. The gap between is this still good and can we still sell this is where an enormous amount of edible food quietly disappears.
That gap is exactly where circular thinking earns its keep. Redistribution, dynamic markdowns, secondary markets, better cold-chain data — none of them are glamorous, and all of them work on the same principle: keep something in use for as long as it’s genuinely fit to be used, instead of writing it off on a schedule.
What this has to do with everything else I write
I came to this from the safety-and-quality side — my instinct is to ask whether something is safe, and whether it’s what it claims to be. Circularity adds a third question that I’ve come to think matters just as much: is this being used well? A system can be perfectly safe and perfectly accurate and still waste a third of what passes through it.
I don’t think the answer is guilt at the fridge door. It’s paying attention one step earlier, and then one step earlier than that — until you’re looking at the decisions that decide an outcome before anyone gets a choice about it.
These are areas I’m still exploring, not ones I claim to have solved. But the more I follow a single tomato backwards, the clearer it gets: most waste is designed in long before it’s thrown out — which means most of it can be designed out, too.
